Subway Italian BMT – Picnic Idea





bread ingredients - 250g bread flour
                               150g wheat flour
                               7g yeast
                               1 tsp salt
                               1 tsp brown sugar
                               240 lukewarm water
                               a litter bit dried oregano
                               2 tsp parmesan cheese
                               olive oil

honey mustard sauce -
mayo
honey
Dijon mustard

filling- whatever you like

11.    activate yeast- add the sugar into the water(30c-35c) (too cold won’t activate, too hot will kill the yeast), add yeast, wait for 10 mins

   set up the flour base- mix the flours and salt, make a hole in the middle of the base, pour the yeast    mixture into the hole, mix some flour to the middle.

only mix the middle part, called 'sponging' , it allows longer fermentation time for the yeast, result in longer bread keeping time and better taste
keep 'flick' some flours cover the thick mixture.

c   cover with a wet towel and let it ferment for 45 mins.

           mix all together to form a dough, keep flooding and pressing the mixture.

66. before kneading the dough , sprinkle flour onto a surface. knead the dough for 10mins.

         after10 mins , you will have a shiny, springy dough.

Place the dough into a greased bowl. wrap it with cling film and let it rise for an hour.

  9. 2tsp of mayo 2 tsp dijon mustard, 1tsp honey , sauce is done.

one hour past, dough should doubled its size, punch the dough let the air out.
 knead it a few times, roll it out to whatever shape you like. place a wet towel over and let it rise for another half hour.

Place it onto a baking tray. grease it to prevent form sticking. brush some olive oil and make a few incisions on top. Sprinkle some parmesan cheese and oregano mix on top.

Place it into a preheated oven (180c) for 30-35 mins, with a bowl of water in to prevent the bread form losing moisture.

  13. after baking, transfer the bread onto a cooling rack to let cool. place filling and sauce. done.
