peri-peri chicken

Peri- peri chicken



1 Chicken approximately 1.5kg
2 red chilis
1 bay leaf
3 garlic
2-3 sprigs of thyme
some coriander
4 tbsp olive oil
juices of half lemon
Nando’s peri-peri sauce(HOT)
1 tbsp oregano
1 tbsp red wine vinegar
salt & pepper

1.Use scissors cut out the fat around the back side and reserve it for later grill chicken. 

      2. spatchcock- taking out some bones and make it lay flat.

   6.blend up chillis (can put more according to self-preference ), garlic, thyme , coriander, bay leaf, oregano, olive oil, red wine vinegar, ½ tsp of salt, lemon juice.


   7. Pour over the mixture on chicken's top side only.

9.Put in oven, 200c, one hours.Every 15 minutes, brush the nando sauce once.
   Brush the chicken fat on griller and grill the chicken.Around 3-4 mins on each side,done.
